Saints Creolee
Medium Onion, chopped
2 Bunches green onions, chopped
3 cloves garlic, minced
1 small celery stalk,  chopped
1 small green bell pepper, chopped
4 tablespoons cooking oil
2 cans Del Monte tomato sauce (10 1/2 oz)
2 tablespoons Mrs. Dash Tony Chachere's seasoning to taste
4 pounds shrimp, peeled (40-50 count)
2 cups cooked rice
Sautee onions, green onions, garlic, celery and bell pepper in cooking oil over low heat for 2 minutes. Add tomato to sauce, Mrs Dash and Tony Chacheres seasoning. Simmer on low for 1 hour. Add shrimp and simmer on low for 40 minutes.
Serve Over Rice

duck and catfish gumbo

˝ cup vegetable oil
˝ cup all-purpose flour
4 cloves garlic, minced
2 cups chopped onions
1 cup chopped celery
1 cup chopped green pepper
1 (10-ounce) package frozen cut okra
1 (16-ounce) can chopped tomatoes, including liquid
5 cups chicken stock
˝ teaspoon cayenne pepper
 1 teaspoon salt 2 bay leaves
 1 pound smoked duck breast (may
substitute crab meat, crawfish, sausage, or shrimp)
6 catfish filets, washed

Make roux with oil and flour, browning slowly and stirring frequently.
Cook for approximately 30 minutes or until a rich brown color is
achieved. Add garlic, onions, celery, and green pepper. Sauté 10-12 minutes until tender. Add remaining ingredients and simmer for one
hour or longer, stirring occasionally. Taste for seasonings. Serve over
rice. Freezes well.

Yield: 3 quarts
